The word "shiitake" literally translates to "oak mushroom" in in Japanese. These meaty-textured, hat-shaped mushrooms grow on oak logs in the wild or can be cultivated on sterile oak chips. Shiitake mushrooms have been widely cultivated in the orient for centuries and may quite possibly be the oldest cultivated mushroom. Shiitake mushrooms have a unique and almost smoky taste and are most often used in stir frys, hot & sour soups and in cream sauces for pasta or rice dishes.
