A variation of Pecorino Romano commonly enjoyed by Southern Italians is known as "PEPATO" which translates to "PEPPERED". Cracked Black Peppercorns are added to the cheese at production time. As it ages, the taste of the peppercorns permeate the cheese giving an additional burst of flavor. Use Alessi Pepato in any dish calling for grated Pecorino Romano cheese. Sprinkle over green salads, pasta salads or any white-sauce pasta dish (Fettucine Alfredo, Pasta col'aglia e olio (garlic and oil)).
