Calamate pitted olives are purplish, elongated, almond-shaped olives that are grown in the Peloponnese part of Greece; mostly in the area surrounding the city of Kalamate for which they were named. Firm and meaty, these olives exide a pungent flavor. Classically, they are prepared by first splitting the olive. Then by being brine-cured and packed in wine vinegar and olive oil. Oftentimes, they are used in Greek Salads, but they can also be used within recipes for bakes meats,tapenades or simply as a snacking olive.
Ingredients: Packed in water, salt, vinegar, olive oil, lactic acid and potassium sorbate, as a preservative.
